Shrimp and Bacon Quesadillas
Every year on Maundy Thursday our church has a potluck supper. I love potluck, it’s a great way to enjoy new food and get some good ideas or recipes. I always have a hard time thinking of something to bring. I like to bring something different as there is always a lot of pasta dishes. This year I thought quesadillas would be great. They don’t take much time and you can make a large amount easily. These quesadillas were great! Let me know what think! Enjoy!
Shrimp and Bacon Quesadillas
Makes 48 small triangles or 24 large triangles
(feel free to cut the recipe down in size)
1 package of 8 Large Flour Tortillas
Guacamole (pre-made or homemade-I used the 2 avocados and a seasoning packet)
1 1/2 pounds of Cooked Shrimp (I used one and a half frozen bags 31/40 count per pound)
4 cloves of Garlic
1 pound of Bacon
1 package of Shredded Mexican Cheese
BBQ Sauce ( I used sweet baby rays, but you could use any flavor. I would like to try it with a chipolte BBQ)
Sour Cream
Directions
1.Diced bacon and cook.
2. Place shrimp in a large pan over med to heat just to warm. Mince garlic and add to shrimp.
3. Spread guacamole on four tortillas.
4. Divide Shrimp on four tortillas. I made sure to spread them out you don’t want them in a big clump in the middle they will all fall out when you cut the tortilla.
5. Sprinkle the bacon on the tortillas
6. Drizzle with BBQ sauce
7. Divide the cheese on all four tortillas
8. Cook in a Quesadilla maker or heat in a pan flipping over to heat both sides until lightly browned and cheese is melted.
9. Using a pizza cutter cut into triangles of desired size.
10. Serve with sour cream and ENJOY!!
